    Lemon Mousse Fruit Tarts

Summer always makes me think of lemons and fresh fruit. I wanted to make something light and elegant for the long weekend. My mind instantly went to petite lemon tarts. I looked up a few recipes for lemon cheesecake filling and lemon mousse and settled on this one: Let’s Dish Lemon Cheesecake Mousse I love phyllo shells for desserts like this, but you could also use mini graham cracker crusts or serve the mousse in chilled glasses. The mousse recipe did make a generous amount so I will either buy a few more boxes of phyllo shells or make a few single-serve pies. Ingredients: 1 cup heavy whipping cream 8…

    Eggplant Caponata

I recently had caponata as an appetizer at the new Via Sophia By the Sea Italian restaurant in Bethany Beach, Delaware. This was the first time I’ve tried caponata and I knew from the first bite I would be recreating this recipe at home. I Googled a few recipes and mostly worked off of this one to create my own version. The best thing about recipes like this is that you can customize the flavors to best suit your tastebuds. Caponata is described as a relish with eggplant, onions, and celery. I would say it reminds me of a lighter eggplant stew. You can serve it over warm baguette as…

Gluten-Free Sugar Cookies with Cream Cheese Frosting

We’ve probably all seen those sugar cookies with a liberal swirl of frosting at the grocery store. You either love them or hate them. I never really paid them much attention until I couldn’t have them (haven’t really seen gluten free versions out there). Last year, I decided to use a bag of regular sugar cookie mix and store bought cream cheese frosting to make St. Patrick’s day themed cookies for my family. They were delicious and way too tempting to have around when I couldn’t have more than 1-2. This year, I decided to go ahead and recreate a homemade version with a gluten-free cookie base. Below is the…

Add a little zest to it…

If you know me in real life, or follow me on Instagram, you may have noticed alove of cocktails, and homemade ingredients for cocktails, brewing for sometime now. One of my favorite things to do is find ingredients that are versatile and workwell with other staple ingredients. Over the holidays, I dried out some orangeslices for the first time and used them for decor, drink garnishes, and photoprops. Tonight, I decided to make another batch of the oranges, candied orange peel, and orangeinfused simple syrup. The orange slices couldn’t be easier—thinly slice a washed and dried orange.Arrange the slices in a single layer on a parchment paper-lined baking sheet. Bakein…

    Gluten-Free Orange Almond Muffins

Breakfast Rut–Two words no one wants to hear during the work week. But every now and then, they roll around and it’s time to look for new recipes or inspiration. Breakfast can be challenging when you’re not a morning person. I usually try to meal prep breakfast the night before so I can just reheat it in the morning. One of the more challenging aspects of trying to minimize gluten in a lifestyle is the lack of quick and easy breakfast foods that are gluten-free. Lately, I’ve been getting tired of my usual go-tos like home fries and sausage, bacon and eggs, hash browns and ham steak. I usually add…

    Pasta Primavera

I’m always looking for new ways to make my favorite dishes gluten-free. This recipe for Pasta Primavera was inspired by a college favorite, and as soon as I took that first bite, I was back in my dorm room studying and eating a quick meal I’d buzzed in the microwave. This homemade version is even better and a great way to use up some veggies that may be hanging out in your fridge. It’s always a good idea to read a recipe the whole way through before you get started so you can see how all the pieces go together! Cream Sauce Ingredients: 4 Tbsp. butter 1 tsp. garlic powder…

    Crustless Bacon-Cheese Quiche

Crustless quiche can seem intimidating, but with the right recipe, and the right baking dish, you won’t even realize the crust is nowhere to be found! This recipe is also so versatile you can change up the ingredients to include spinach and feta, ham and cheese, or whatever your favorite breakfast combo happens to be! Ingredients: 5-6 slices of cooked and cooled bacon 5 eggs 2/3 cup heavy-cream 1 cup of milk 1 cup of shredded cheese (I did a mix of mozzarella and Mexican 4 cheese blend) 2/3 cup grated parmesan cheese 1/4 cup chopped green onions Pepper, garlic powder, or onion powder to taste (optional) Parsley to sprinkle…

    Lemon Poppy Seed Muffins

If I only baked for myself, I think everything would be chocolate all the time. Chocolate cookies, chocolate cake, chocolate muffins, chocolate everything. But every now and then, I like to make things I know others will enjoy, even if it’s not normally at the top of my list. I was in the mood to make muffins, and knowing I was making chocolate cookies later in the week (stay tuned for that post), I decided to go with Lemon Poppy Seed for the muffins–one of my mom’s favorite. I found this recipe online and then tweaked a few things based on what I had in the house or our personal…

    Mixed Berry Crumble Bars

Making a mixed berry compote has become a quarantine favorite. Using a bag of frozen fruit that includes blueberries, strawberries, blackberries, and cherries, I’ve been cooking the fruit down with some turbinado sugar, lemon juice, lemon zest, and vanilla extract. The final product is delicious on toast, over ice cream, or as a key component in these mixed berry crumble bars. Once again, I made berry bars before and couldn’t remember exactly which recipe I used, so I turned to Healthy Gluten-Free Family to use the Berry Crumble Bar recipe found here as inspiration. Since I already had the mixed berry compote ready to go in the refrigerator, that was…

    Blueberry-Lemon Bread

Blueberries and lemons go so well together! So as Mother’s Day was a approaching, I was trying to think of something to bake for brunch with the ingredients we already had in the house. Cue the fresh blueberries and lemons we had in the refrigerator that needed to find a purpose, and soon 🙂 I made a gluten-free, blueberry lemon coffee cake before, and while it was delicious, I didn’t love it enough to make the same one again. So I started looking for a different recipe and turned to Healthy Gluten-Free Family, an Instagram account and blog I follow. The recipes from this site never let me down, and…
