Oatmeal Chocolate Chip Cookies
Oatmeal chocolate chip cookies give you the best of both worlds–the warmth of cinnamon and the sweetness of chocolate. The first batch of these that I tried were a 10/10 on flavor, but something was missing in the texture and shape of the cookies. Considering the first batch was made after 10:30pm, I may have been short on time and only refrigerated the cookie dough for 10-15 minutes. The second round, when I had more time to spare, I refrigerated the unbaked cookies for 2 1/2 hours. What a difference in the shape and texture! I encourage you to play around with the refrigeration time to get the cookies to…

Spiced Banana-Walnut Bread
Sometimes we’re in the mood to bake, but we don’t have the ingredients we need for what we want to make. That was me last night. It was a stormy Friday night, and all I wanted to do was bake banana bread. A quick look in the kitchen confirmed it, I only had one banana and the recipe called for four. Luckily, I had plenty of other things to do so I made it a productive night and decided baking could wait until the morning. I’m glad I waited until today because I also realized I needed to buy new loaf pans and it gave me extra time to look…

Cheddar-Chive Scones
I’ve made other savory scones on the blog before, but these cheddar-chive scones turned out to be even better than the first recipe I tried and if I could eat them every single day, I would. The best part, the scone dough recipe is the perfect base for a variety of flavors and toppings. With a few easy adjustments, you can make any scone your heart desires! Ingredients: Dough: 2 3/4 cups King Arthur Gluten-Free All-Purpose Baking Mix 1/3 cup sugar–I used a little less than 1/3 cup since these are savory scones 3/4 tsp. salt 1 Tbsp. baking powder 1/2 cup cold butter 2 large eggs 1/2 cup to…

Fudgy Brownies
Rich, chocolatey brownies are always a good idea. I decided to give gluten-free brownies from scratch a try, and I’m so glad I did. I’ve made “regular” brownies from scratch only once before because the box mixes always worked just fine, but there is something to be said about the intense chocolate flavor you get from making brownies from scratch. These fudgy brownies definitely require a side of milk so pour yourself a glass and enjoy! Ingredients: 1 1/2 cups granulated sugar 1/2 cup unsalted butter 1/2 teaspoon salt 1 teaspoon vanilla extract 3/4 cup cocoa (I used the Hershey’s brand) 3 large eggs 3/4 cup King Arthur gluten-free flour…

Cinnamon-Streusel Coffee Cake
Finally a gluten-free cake that tastes as delicious as it looks with all the same great textures and flavors of a traditional coffee cake. My favorite part is the cinnamon streusel topping, and this recipe adds an extra layer of strudel in the middle for even more cinnamon-sugar goodness. I looked for recipes to try online and found a good variety of gluten-free adaptations. When I came across a coffee cake recipe on the back of the King Arthur Baking Mix box, it was like it was meant to be! You can find the recipe here or follow the instructions below for the easy modifications I made to the recipe.…

Savory Scones
Proud gluten-free baking moment! For anyone who has tried baking with gluten-free flour, you know that some recipes work out great, and some make you want to give up baking all together. Thankfully, this recipe from the King Arthur Flour site turned out perfectly! I specifically used the gluten-free version of the flour mentioned in order to make this recipe. Other than switching out the type of flour, I didn’t have to make any other adjustments to get the right consistency–which is a huge plus when working with alternative flours. Some tips and tricks I discovered along the way: 1.) If you want to make different types of scones with…

“I’m a Girl Who Loves Black and is Wearing Pink”
Bonus points if you can name what movie that quote is from haha I actually love purple, but black is a close second if you look at the clothes in my closet. But for this blog post, I went all out with the PINK and red for Valentine’s Day, and Valentine’s Day only. I love chocolate covered strawberries, and they will always be my all-time favorite dessert, but this year I decided to try something new with Valentine’s Day themed mini donuts!! These donuts provide a fun way to be creative in the kitchen. With so many different glazes and toppings to choose from, the possibilities are endless. I used…

Mini Cinnamon and Sugar Donuts
I ordered my mini donut pan online and couldn’t wait for it to arrive so I could try out the recipe below I found on my gluten-free kitchen. I tweaked the ingredients just a little from the original recipe, but for the most part, I followed the instructions exactly since this was the first time I was trying to make a gluten-free donut batter. Or any donut batter. These donuts turned out so good and they were the perfect morning or evening snack with a cup of coffee. Gluten-free, and baked not fried, they are a simple solution to anyone’s sweet tooth. Don’t let the length of the ingredients or…

Gluten-Free Almond-Oatmeal Bake
Things don’t always turn out how you thought you would—but that’s not always a bad thing. In this case, it was a very, very good thing. Here is the link to the Popsugar recipe I was looking at when I decided to make baked almond-oatmeal bars. I may still go back and try these again following the recipe, but to see what I changed and added, take a look below for my own version of this delicious breakfast oatmeal “bar”. **Disclaimer** I did stop measuring at some point during this recipe and eye-balled my ingredients, but the below measurements are pretty close to what I used. Don’t always feel like…

Gluten-Free Mac and Cheese
With so many people going gluten-free for one reason or another, the one food that seems to be at the top of everyone’s “most missed” list is mac and cheese. So, with that in mind, I set out to make a yummy, gluten-free white cheddar mac and cheese that could help satisfy all of those pasta cravings. With just a few minor tweaks to standard mac and cheese recipes, I was able to create this 3-cheese mac and cheese perfection. Recipe and pictures below. Enjoy! Ingredients: • 1 Box of Gluten Free Pasta • 1/4 cup butter • 1/4 cup Gluten Free Bisquick (any gluten free flour could work) •…
