Anniversary Piña Coladas!
Piña coladas are my mom’s favorite so of course they were my go-to drink for my parents’ 34th wedding anniversary! I’ve made piña coladas before, usually using one of the frozen juice mixes where you just add rum and blend–but this time, I wanted to use some fresh ingredients and I wanted all of the flavors to incorporate together. There have been a few times where the coconut flavor has been too overpowering or it felt like I was just drinking a pineapple smoothie (which is also delicious, but not what I was going for).
Thankfully, this time turned out great in terms of flavor and consistency, and my parents really enjoyed their festive drinks served out on the back patio as we celebrated their anniversary and the long Labor Day weekend.
Ingredients and instructions below!
Ingredients:
- (3) 6 oz. cans of Dole Pineapple Juice
- (1) 15 oz. can of GOYA Cream of Coconut
- 1/2 cup fresh coconut flakes
- 2 cups fresh pineapple (set some aside for garnishing)
- 2 cups of ice
- Whipped cream
- Maraschino cherries (for garnishing)
- Rum to taste (I actually used coconut vodka because it’s what I had at home and it turned out great)
Instructions:
1.) Add ice, pineapple juice, cream of coconut, and rum/liquor to the blender and blend util most of the ice is crushed.
2.) Add in the fresh fruit and coconut flakes.
3.) Blend until smooth.
4.) Pour your piña colada drink mixture into glasses.
5.) Top off with whipped cream, fresh pineapple, and a maraschino cherry.
