Gluten-Free Mac and Cheese
With so many people going gluten-free for one reason or another, the one food that seems to be at the top of everyone’s “most missed” list is mac and cheese. So, with that in mind, I set out to make a yummy, gluten-free white cheddar mac and cheese that could help satisfy all of those pasta cravings. With just a few minor tweaks to standard mac and cheese recipes, I was able to create this 3-cheese mac and cheese perfection. Recipe and pictures below. Enjoy!
Ingredients:
• 1 Box of Gluten Free Pasta
• 1/4 cup butter
• 1/4 cup Gluten Free Bisquick (any gluten free flour could work)
• 2 cups skim milk or 2%
• 1 cup white cheddar cheese
• 1 cup American Cheese
• Black pepper to taste
• Parmesan cheese
Instructions:
1.) Cook pasta according to the box directions.
2.) Meanwhile in a saucepan melt the butter and whisk in the flour.
a. Whisk quickly since the Bisquick thickens quicker than normal flour.
3.) Cook for 2-3 minutes, stirring constantly. Whisk in milk.
4.) Slowly add cheese, stirring until smooth and completely melted. Add pepper.
5.) Add cooked pasta and mix until well combined.
6.) Pour into an oven safe crock/dish.
7.) Sprinkle Parmesan cheese on top.
8.) Put it in the oven on broil just until the cheese browns.
9.) Serve and enjoy.
